The HIVE - Melbourne Airport Hotel

Future Food have had a longstanding working relationship with Melbourne Airport working through food and beverage solutions for terminal 2, 3 and 4 and with Hanna’s café and now the Hive Hotel development.

The Hive development with ACCOR hotels brands of IBIS Styles and Novotel will provide a design orientated food and beverage cluster at the Airport and a new asset as part of their long-term strategy.

Future Food were engaged to assess the scheme layout and design for operational efficiency of a restaurant, café, pub, wine bar as well room service and function conferencing spaces. Secondarily, to provide a Forecast of Sustainable Volume of Market Potential for the food and beverage outlets based on the design and forecast demographic customer base. 

The second scope of work involved a review of updated plans completing a revised Market Potential, providing a demographic analysis of identified customers to inform the proposed food and beverage concepts, Positioning & High-Level Mix providing the development with unique points of difference and a Melbourne experience.

  • Identified the seven key market segments that would be potential customers of the F&B at the hotel which became the basis for our assessment of the potential F&B sales at the hotel’s proposed venues
