Melbourne Theatre Company engaged the services of Future Food to help them approach the market in 2021 to attract a new Food & Hospitality partner to deliver a new restaurant concept, operate foyer bars and deliver catering services across the theatre.

Future Food were tasked with leading this project from start to finish, including the development of a procurement strategy, creation of all formal documentation, facilitating site tours and operator presentations, scoring submissions and negotiating contractual terms between MTC and the operator.

Key Success Measures

• Following the successful appointment of The Fresh Collective, the restaurant has been transformed into Miss Pearl, a modern Asian Fusion restaurant and bar that has set a new benchmark within the broader arts precinct. 

• The Fresh Collective’s modern approach to food and hospitality has significantly enhanced the visitor experience at MTC and achieved the aspirations set at the outset of the consultancy.
