Future Food were approached by Dexus in mid 2015 to masterplan the new dining and hospitality precinct at the rear of 360 Collins Street, Melbourne.360 Collins Street is a superbly designed, modern office tower centrally located on Melbourne’s premier business boulevard. A significant redevelopment program delivers completely refurbished workspaces, an extensive retail plaza on Little Collins Street and a new full circulation ground floor foyer. The new centralised entry from Collins Street, framed by quality retail and foyer with a welcoming Concierge and provides an expansive, quality feel with spaces to work and meet.

Future Food’s work was to focus on the rear of the building where a superb locations interfaced the 360 site with Lt. Collins St.  To the rear of the ground floor foyer, a grand staircase flanked by escalators rises through an expansive double height zone and leads you to the dynamic Food & Beverage precinct. This unique outdoor dining area provides a broad selection of quality cuisine experiences. The north facing plaza offers an exclusive grassed area and a range of seating pockets dispersed between a range of six modern casual dining destinations.

• Undertaking a full review of the Food & Beverage Options within Melbourne’s CBD and establishing the Gap Analysis for Food Concepts.

• Develop a Food & Beverage Positioning Statement for the 360 Precinct defining Service Styles & Key Hospitality Characteristics.

• Critically Review the proposed Scheme & Advise on Hospitality Planning relating to Spatial  Planning & Operations.

• Forecasting the Sustainable Food & Beverage Volumes & Sales Projections coupled with Tenancy Sizes.  

• Provide leasing with a list of Suitable Food Operators who aligned with the agreed Positioning Statement.

• Concept Review of all Food Concepts submissions & shortlisting concept in line with the Agreed Mix & Position Statement. 

• Advise to the development teams on Design, Place Making, Clustering, Operational Aspects for Front & Back of House Design & Operations.
