The New Sydney Fish Market

One of Australia’s leading tourist destinations, with more than 6,000m2 of new public open space. Fishmongers, restaurants, cafés, bars and specialty food retailers in a market hall setting.

2022 – 2024

Sydney Fish Market (SFM) and Infrastructure NSW (INSW) utilised Future Food as the interdependent scheme development and business case for the Sydney Fish Market reached a crucial stage.

Our work included

  • Delivering a business model and F&B revenue maximisation strategy for the varied stakeholder groups within a political environment. The key elements aligned the opportunity with the target audiences (inner city residents, through to visitors and tourists) and a food and hospitality operator mix.

  • We provided planning and design advisory (May 2022) - Future Food assisted INSW to develop their design to maximise the business case potential.

  • We provided Event Terraces - Special Event and Function planning, to assist INSW understand the requirements for retro-fitting events venues into their already established building plans, to provide SFM with additional revenue streams in a high value site on the waterfront of Blackwattle Bay.

  • Sydney Fish Market is due to launch in January 2026 and is currently under construction. It is the largest waterfront development in Sydney since the Opera House and has a reported construction and development budget in excess of $750m.
