Future Food were appointed to deliver three core stages of food & Beverage Masterplanning for The Ritz-Carlton Luxury Hotel development in Elizabeth Quay, Perth, and to shape the vision for the Level 80 signature restaurant at The Ritz-Carlton Melbourne.

Future Food’s objectives were to masterplan for the food and beverage provision of the hotel, balancing the provision of a suitable amenity for The Ritz Carlton guests as well as complementing the growth of Elizabeth Quay as a dining destination within the Perth market. Due to proximity to established high end food & beverage provisions, a comprehensive strategy was needed to ascertain clear differentiation for the site to ensure commercial viability in this highly competitive and robust food & beverage landscape.

Melbourne, Australia

Our initial scope centred on comprehensive market research and a detailed gap analysis of Melbourne’s premium hotel dining sector. We benchmarked global best practice to identify unique opportunities and define a concept direction that would differentiate the restaurant within the city’s highly competitive luxury dining landscape. The outcome was a robust concept paper that set the foundation for the restaurant’s positioning, guest experience, and commercial strategy.

Following this, Future Food was retained to advise on the planning of the venue itself, including the integration of key design features across the bar, lounge, and restaurant to ensure alignment with the concept vision.

On 23 March 2023, The Ritz-Carlton Melbourne opened its doors, with Atria unveiled as the hotel’s signature dining destination. Guided by our strategic framework and with acclaimed chef Mark Best appointed as Culinary Advisor, Atria has quickly established itself as a stand-out in Melbourne’s fine dining scene.
