Melbourne Town Hall
Located on the lands of the Wurundjeri Woi-wurrung and Bunurong Boon Wurrung peoples of the Eastern Kulin, Melbourne Town Hall is a magnificent heritage building and a significant landmark in the heart of the city.
The iconic building is a place where many city-shaping decisions have been made. Today it is also a hub for Melbourne’s cultural and civic activity – playing host to live music performances, weddings, receptions, community gatherings, exhibitions and more.
The Melbourne Town Hall is one of Melbourne’s most recognisable and high-profile buildings that delivers a range of hospitality and civic-related services for the community. Future Food were brought on to deliver an initial procurement strategy, with the aim of engaging a future operator for the venue.
After extensive stakeholder engagement, market sounding exercises and project workshops, Future Food delivered a comprehensive strategy that informed the future commercial model, the scope of services and procurement approach to ensure a comprehensive process that aligned to Council's strict procurement guidelines.
Following the approval of the strategy, Future Food led a multi-stage EOI into RFP process and acted as the chair of the evaluation panel, alongside other key City of Melbourne stakeholders to appoint a venue manager/catering partner for the asset.
As the subject matter expert in the process, Future Food were responsible for the development of all EOI and tender documents, the creation of evaluation criteria and subsequent scoring matrix as well as the establishment of a new services specification that formed the foundation of the future operator scope.
To conclude the consultancy, Future Food delivered a formal recommendations report to assist Council in approving the successful operator and progress through to final contract negotiations.

This consultancy attracted significant interest within the market and led to a highly successful outcome for Council, both in terms improved commercial outcomes and quality of applicants.
