Future Food was engaged by Shepparton RSL to manage the procurement of a new food service operator following the retirement of the Club's long standing caterer. The engagement involved developing the operator procurement strategy, preparing a comprehensive Information Memorandum and Expression of Interest documentation, marketing the opportunity to the industry, facilitating site inspections, evaluating submissions, and providing independent recommendations to the Board. The procurement was aligned with the Club's $10 million redevelopment programme and its vision to reposition the venue as a leading regional hospitality destination with contemporary dining, expanded café and function facilities, and year round activation.
Future Food undertook a targeted national market engagement programme, directly approaching 21 experienced catering operators while simultaneously promoting the opportunity through an open market campaign. The process generated significant industry interest, resulting in 16 expressions of interest, seven operator site inspections, and six formal submissions. Following a structured assessment against commercial, operational and strategic criteria, Future Food shortlisted the most suitable proponents and facilitated the Club's evaluation process.
The procurement successfully delivered a highly competitive field of experienced operators, providing the Club with multiple commercially attractive proposals and a clear pathway to selecting a long term hospitality partner.
Following Future Food's recommendations and the Club's due diligence process, Ascot Catering was appointed as the preferred operator. The appointment aligned with the Club's strategic objectives, delivering a contemporary food offering, operational capability, and a partnership model designed to support the venue's ongoing redevelopment, growth in membership, and enhanced visitor experience.
