Future Food collaborated closely with key stakeholders and the Property Team at the University of Melbourne to design and plan the restaurant and function spaces within the beautifully restored, heritage-listed Ian Potter Museum of Art.
Guided by the client’s aspiration to create a modern inner north-style wine bar and restaurant, a clear vision was established to shape the strategic direction of the project.
Our focus was on designing efficient, flexible and customer-centred spaces that would appeal to the museum’s diverse audience, including students, art lovers, food and beverage experience seekers and University staff.
Future Food also provided detailed advice on demand, financial modelling and venue utilisation to support strong commercial outcomes across all spaces.
To conclude the consultancy, Future Food led a highly successful expression of interest campaign and tender process to attract an industry leading hospitality group to operate the signature restaurant and catering services within the museum.
The multi-stage campaign generated strong interest, with 14 of Melbourne’s top hospitality groups competing for the opportunity to bring this unique Parkville venue to life.
At the end of the process, Nathan Doyle and Cameron Earl of the Agree to Agree Group were awarded the contract. They have since successfully launched RESIDENCE at the Potter, a forward-thinking venue that evolves through an annual Chef in Residence program, ensuring the offering remains fresh, contemporary and ever changing.
