The Empire Theatre in Toowoomba engaged Future Food to lead a structured Expression of Interest process to appoint a restaurant operator and preferred catering partner capable of repositioning the venue as the dining and event destination in the region. Future Food’s scope of work included strategic framing of the opportunity, preparation of briefing documentation, identification of aligned operators, direct market engagement, campaign management, submission evaluation and provision of clear, evidence based recommendations to the Selection Panel.
Future Food designed and executed a targeted engagement strategy, directly approaching 54 catering operators whose capability aligned with the Theatre’s ambitions, supported by digital promotion and database outreach. Despite seasonal timing constraints, the campaign generated meaningful industry interest, resulting in nine expressions of interest, multiple site inspections and three formal submissions. Importantly, the process dispelled local market speculation and reinforced probity through transparent communication and structured assessment.
Each submission was rigorously evaluated against defined criteria including operational capability, event scale, financial stability, concept alignment, commercial literacy and partnership mindset. Future Food provided detailed written assessments of each proponent, identifying strengths, risks and areas requiring clarification. This advisory role ensured the Theatre was equipped not only with a preferred operator recommendation, but with a clear understanding of comparative capability across the market.
Kalamata Taverna Pty Ltd emerged as the front runner due to its established Toowoomba footprint, multi venue management capability and detailed commercial proposal. Future Food’s analysis highlighted the strength of the proposed concept, its operational readiness and its alignment with the Theatre’s long term vision
The outcome of Future Food’s advisory services was the identification of one of the town’s leading hospitality operators at the time of writing, under a mutually beneficial commercial framework. The Empire secured a commercially robust agreement aligned to theatre performance, while the operator gained long term tenure within a landmark civic asset. The process demonstrates Future Food’s capability to deliver disciplined market engagement, commercial structuring expertise and strategic F&B advisory services that translate cultural assets into sustainable hospitality partnerships.
